Churros and Mexican Hot Chocolate

We've been on a Mexican food kick lately. Yesterday was Gringo tacos so we decided we needed something more authentic for dessert.


Churros:
2 Tbl. veg. oil
1 Tbl. sugar
1/2 tsp. salt
1 Cup water
1/2 tsp. vanilla
1 Cup All purpose flour

Vegetable oil to the depth of 1 in. for frying
cinnamon sugar mixture to roll churros in.

In 2 qt. saucepan, combine oil, sugar, salt, vanilla, and water. Bring to boil over high heat stirring occasionally. Remove from heat and add flour all at once, stirring vigorously with wooden spoon until mixture pulls away from the sides of the pan and forms a thick smooth textured ball. Let cool .
Put dough into piping bag with a large 3/8 in. star tip or use a cookie dough gun if you have one.
Pipe 5 in long pieces into 375 degree oil and fry to a deep golden brown. About 2-3 minutes. Let drain on paper towels and then roll in cinnamon-sugar mixture while still warm.
